Wood—and oak in particular—has been used for centuries to preserve and age wines. While stainless steel, concrete, and amphorae vats have gained ground today, wood remains essential in the production of many red wines, and sometimes white wines for aging.
But be careful: the wood isn't just there for "perfume." It plays several essential technical and aromatic roles.
Wood acts as a micro-oxygenator
Unlike stainless steel or concrete vats, an oak barrel allows a micro-dose of oxygen to pass through its pores. This has two major effects:

the wine becomes more supple , the tannins become more rounded,

the aromas evolve towards more complexity (ripe fruits, tertiary notes).
Result: silkier, more stable, more harmonious wines over time.
Wood imparts aromas to wine
This is what we call the aromatic contribution of the wood . Depending on the type of wood (French, American, Hungarian oak, etc.), its age, and the toasting of the barrel, the wine can gain notes of:

vanilla,

hazelnut,

sweet spices,

cocoa,
-
roasting or toasting.
But the goal is not to “mask” the wine , on the contrary: good aging in wood must support the wine , not dominate it.
Wood structures and prepares great wines for aging
In red wines in particular, aging in barrels allows:
✔️ stabilize tannins,
✔️ gain in complexity,
✔️ structure a wine for aging.
This is why the great appellations like Margaux, Saint-Émilion, Hermitage or Cahors use wood with skill, particularly in their prestige vintages .
