The grape variety(ies): 100% Gamay

The terroir : Three winegrowers, three different terroirs to represent three cantons! Emilienne Hutin's old vines are cultivated on clay soil with an outcrop of molasse in the Brive area of ​​Dardagny. At the other end of the lake, Stéphanie Delarze cultivates her vines on clay-limestone scree soils. Finally, further up the Rhône, Mathilde Roux cultivates old vines on granite gneiss soils, typical of Fully.

Tasting and pairing : The color is a beautiful deep purplish red. Subsequently, in addition to the typical aromas of Gamay, a wide range of aromas is discovered as the tasting progresses (red and pink flowers, red and black berries). An intense nose reminiscent of small forest fruits with a slight spicy touch (licorice). On the palate, the aromas of the nose are supported by fine tannins, still dense, but very well integrated and with an interesting structure! The incredible concentration, due to the impeccable work that the winemakers do to reveal their terroirs, is matched only by the finesse of the tannins brought by the work on the stems.

A wine to be enjoyed with both classic and more daring pairings: the wine will easily pair with white meat or vegetarian dishes but will also surprise with feathered game or lightly spiced dishes!
