Domaine Jolivet's "L'Instinct" 2022 is a Saint-Joseph of remarkable purity. It opens with an intense purple color with violet highlights. The nose immediately seduces with gourmet notes of blackberry, violet, black pepper, and warm stone. On the palate, it's the balance that impresses: a crisp, juicy, and supple juice with a beautiful fresh structure. The tannins are fine and silky, supported by elegant acidity and a mouth-watering finish with hints of sweet spices and licorice.

This Saint-Joseph pairs brilliantly with regional cuisine: roasted duck breast, flank steak with shallots, lamb tagine, or grilled vegetables with thyme. It also pairs well with a platter of fine charcuterie or lightly aged cheeses.

The Estate:
Domaine Jolivet, led by Bastien Jolivet since 2014, is one of the promising young faces of the Saint-Joseph appellation. Located in Saint-Jean-de-Muzols, on the granite slopes of northern Ardèche, the estate cultivates its 11 hectares with passion and an environmentally friendly approach. "L'Instinct" is a cuvée of the heart, vinified with minimal intervention to reveal the full character of the Syrah grape variety in a pure, straightforward, and contemporary style.
