Domaine Jolivet's L'Instinct is a Saint-Joseph of remarkable purity. It opens with an intense purple robe with violet highlights. The nose is immediately seductive with enticing notes of blackberry, violet, black pepper, and warm stone. On the palate, it is the balance that impresses: a crisp, juicy, and supple wine with a beautiful fresh structure. The tannins are fine and silky, supported by elegant acidity and a mouthwatering finish with hints of sweet spices and licorice.

Food and Wine Pairings:
This Saint-Joseph wine pairs brilliantly with regional cuisine: roast duck breast, flank steak with shallots, lamb tagine, or grilled vegetables with thyme. It also goes very well with a platter of fine charcuterie or lightly aged cheeses.

The Estate:
Domaine Jolivet, run by Bastien Jolivet since 2014, is one of the promising young wineries of the Saint-Joseph appellation. Located in Saint-Jean-de-Muzols, on the granite slopes of northern Ardèche, the estate cultivates its 11 hectares with passion and respect for the environment. "L'Instinct" is a wine close to their heart, vinified with minimal intervention to reveal the full character of the Syrah grape in a pure, straightforward, and contemporary style.
