Grape variety : 100% Pinot Noir

The terroir : Of Jurassic origin, the soils can vary (stony and light, sometimes marly and heavier, even alluvial and deep) but all remain marked by limestone, always abundant, here with a low clay content. The soils' low nitrogen content, a source of nutrition for the vines, as well as their relatively high levels of various mineral salts offer Boris and his team an ideal raw material for the production of great wines from "Little Burgundy" as we rightly like to call the Neuchâtel vineyards!

The grapes are grown using environmentally friendly methods ( Vinatura Swiss standards). Yields are limited and harvested manually once the ideal ripeness is reached. After a vatting period of approximately 15 to 18 hours, the bunches are pressed and the juice fermented into rosé wine, in the traditional manner .

Tasting and pairings: The color is clear and salmon-pink. Subsequently, the nose and then the palate are marked by raspberry, but also other small, crisp red fruits and floral aromas. Overall, this Œil de Perdrix is ​​well-balanced and lively.
