Characteristics: The 2021 "Vieilles Vignes" vintage from Domaine Rose Dieu has an intense garnet color, a sign of beautiful concentration. The nose opens with a generous bouquet blending ripe black fruits, candied cherry, plum and sweet spices, enhanced by subtle notes of garrigue, cocoa and leather. On the palate, the attack is ample, the tannins are silky and well integrated, and the body dense without excess. The balance between freshness and roundness is perfectly mastered, with a beautiful aromatic persistence on notes of pepper and stewed fruits. A wine of character, structured, made for aging.
Food and Wine Pairing: Ideal with Provençal stew, wild boar stew, confit lamb shoulder, or mature cheeses. Serve between 16 and 18°C after decanting.
