The Coast – The Time It Takes, Rochefort Castle – City of Lausanne 2020
Characteristics: The 2020 Le Temps Qu'il Faut cuvée from Château de Rochefort is distinguished by its dark red color with purple highlights. The nose is ripe and complex, expressing notes of chocolate, coffee, cocoa, and black fruits. On the palate, the wine is full-bodied with a velvety touch, offering a powerful tannic structure and remarkable length.
Food and Wine Pairing: This Merlot pairs perfectly with a rack of Sisteron lamb in a salt and herb crust, accompanied by Ticino polenta.
The Estate: Château de Rochefort, located in Allaman, is one of the smallest wine estates in Lausanne, covering 4.3 hectares. Since 2009, the estate has opted for biodynamic farming, banning synthetic molecules in favor of plant extracts and herbal teas, used according to lunar and planetary rhythms. The estate is the only one in the Lausanne region to have a predominantly red grape variety, with more than 60% of its vines planted with red grape varieties such as Pinot Noir, Gamaret, and Merlot.
